Job Description

This position reports to the Executive Pastry Chef. In addition, you will contribute to team development, operational excellence, and the efficient management of resources within the pastry department. As a Pastry Sous Chef, you will be responsible for: Supporting the Executive Pastry Chef in the daily management and supervision of pastry operations. Coordinating and supervising pastry production, ensuring consistency in quality, flavor, and presentation. Organizing the team's daily workflow and efficiently assigning tasks. Overseeing inventory control, storage, stock rotation, and ordering of supplies required for operations. Ensuring compliance with food safety, hygiene, allergen management, and cold chain standards. Ensuring the proper use, maintenance, and cleanliness of pastry equipment, utensils, and facilities. Participating in the development of new creations, seasonal offerings, events, and special projects. Supporting cost control, waste reduction, and resource optimization initiatives. Training, motivating, and developing the pastry team while promoting a culture of excellence, learning, and teamwork. Ensuring compliance with HACCP, FLHSSE, and Mandarin Oriental procedures and standards. Acting as a role model within the team, promoting the company’s values and service standards. Taking on operational and leadership responsibilities in the absence of the Executive Pastry Chef. As a Pastry Sous Chef, we expect you to have: Previous experience as a Pastry Sous Chef, Junior Pastry Sous Chef, or in a similar supervisory role, preferably within luxury hotels or fine dining establishments. Strong technical knowledge of pastry, bakery, and artisan production techniques. Knowledge of food hygiene regulations, HACCP principles, and allergen management. Strong leadership, organizational, and planning skills. The ability to work in fast-paced, high-pressure environments without compromising quality. Exceptional attention to detail and a commitment to excellence. Excellent communication and teamwork skills. A proactive, solution-oriented mindset with a focus on continuous improvement. Core Responsibilities

Support the Executive Pastry Chef in managing daily pastry operations, coordinating production, assigning work, and maintaining quality, food safety, inventory, and equipment standards. Develop the pastry team, contribute to new offerings and cost-control initiatives, and assume operational leadership when the Executive Pastry Chef is absent.

Requirements

Candidates should have prior experience in a pastry supervisory role, preferably in a luxury hotel or fine-dining setting, and strong technical knowledge of pastry, bakery, and artisan production. They should also demonstrate leadership, organization, attention to detail, communication, and knowledge of food hygiene, HACCP, and allergen management.
